Over Champagne Pommery

Pommery kent een lange en rijke geschiedenis die reeds in 1836 start. Dit bekende champagnehuis bevindt zich in Reims, de Champagne-stad bij uitstek. Louis Alexandre Pommery verbouwde er jaarlijks een kleine 100.000 flessen. Een sleutelmoment in de geschiedenis van Pommery vond plaats in 1868. Mevrouw Pommery kocht toen een 19 km lang tunnelstelsel dat onder Reims was uitgegraven door Romeinse soldaten tijdens hun bezetting van Gallië. Door de inzet van talloze Franse en Belgische mijnbouwers onderging dit gangenstelsel een totale metamorfose en werd het een enorme opslagruimte voor Champagne. In deze 30 meter diep gelegen gangen die omringd zijn door kalksteen heerst een constante temperatuur van 10 °C. Vandaag de dag is Clément Pierlot als 10e ‘chef de cave’ van Pommery aangesteld. Hij overziet de vinificatie die in het 50 hectare grote complex in Tours-sur-Marne plaatsvindt.
